Instructions

  2. Puree the Oranges: Once cooled, cut the oranges into quarters and remove any seeds. Place the entire oranges, including the peel, into a food processor or blender and puree until smooth.
  3. Mix Wet Ingredients: In a large bowl, beat the eggs with ⅔ cup honey and 1 teaspoon vanilla extract until combined.
  4. Combine Dry Ingredients: In a separate bowl, mix together the almond flour, ground pistachios, and baking soda.
  5. Combine All Ingredients: Add the orange puree to the wet ingredients, then fold in the dry ingredients until a thick batter forms.
  6. Prepare the Pan and Bake: Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan. Pour the batter into the pan and smooth the top. Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
