Sausage Mixture
- 1 lb (450g) sausage meat or ground sausage
- ½ cup finely diced onion
- 1 clove garlic, minced
- 1 tsp dried sage
- 1 tsp dried thyme

- Prepare the Sausage Mixture: In a large bowl, combine the sausage meat with finely diced onion, minced garlic, dried sage, dried thyme, ground black pepper, and salt. Mix thoroughly to ensure all ingredients are evenly distributed.
- Cook Onion and Garlic: Heat the olive oil in a skillet over medium heat. Add the diced onion and minced garlic, sautéing until translucent and fragrant, about 3–4 minutes. Allow to cool slightly before adding to the sausage mixture to avoid cooking the sausage prematurely.
- Combine Mixture: Add the sautéed onion and garlic into the sausage mixture and mix well to combine all flavors evenly.
- Prepare Puff Pastry: Roll out the thawed puff pastry sheet on a lightly floured surface into a rectangle roughly 9×12 inches. Cut the sheet in half lengthwise, creating two long strips.
- Form the Sausage Rolls: Divide the sausage mixture evenly between the two pastry strips, spreading it along one edge of each strip in a long log shape. Carefully roll the pastry over the sausage filling, pressing the edges to seal and creating a tight roll.
