Ingredients

Scale

Sausage Filling

  • 1 lb (450g) sausage meat or ground sausage
  • ½ cup finely diced onion
  • 1 clove garlic, minced
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • ¼ tsp ground black pepper
  • ¼ tsp salt
  • 1 tbsp olive oil

Dough and Finish

  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the sausage filling: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely diced onion and minced garlic, sautéing until soft and translucent, about 3-4 minutes. Remove from heat and allow to cool slightly. In a bowl, combine the cooked onion and garlic with the sausage meat, dried sage, dried thyme, black pepper, and salt. Mix thoroughly to evenly distribute the herbs and spices.
  2. Preheat the oven: Set your oven to 400°F (200°C) to preheat while you assemble the sausage rolls.
  3. Prepare the puff pastry: On a lightly floured surface, lay out the thawed sheet of puff pastry. Roll it gently to smooth out any folds and slightly enlarge the sheet if needed.
  4. Assemble the sausage rolls: Spread the sausage mixture evenly along one edge of the puff pastry sheet, forming a long sausage-shaped line. Carefully roll the pastry over the filling, sealing the edges by pinching or pressing with a fork to ensure no filling escapes during baking. Cut the rolled pastry into 1.5 to 2 inch segments to form individual sausage rolls.
  5. Apply egg wash: Place the sausage rolls on a baking sheet lined with parchment paper. Brush the tops with the beaten egg to give the rolls a golden, shiny finish once baked.
  6. Bake: Bake the sausage rolls in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown, and the sausage meat is fully cooked. Internal temperature of the sausage should reach 160°F (71°C) for safety.
  7. Serve: Remove from oven and let cool slightly. Serve warm as a delightful holiday appetizer or snack.

Notes

  • Ensure the puff pastry is properly thawed to avoid cracking while rolling.
  • The sausage meat can be substituted with flavored sausage varieties for added taste.
  • For crispier rolls, place them on a wire rack during baking to allow air circulation.
  • These sausage rolls can be made ahead and refrigerated; reheat before serving.
  • Adjust seasoning to your taste preference, adding chili flakes for a spicy kick if desired.
