Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper or lightly grease it to prevent sticking.
  2. Cook the ground beef: In a large skillet over medium heat, cook 1 lb of ground beef until browned and fully cooked, breaking it into crumbles as it cooks. Drain excess fat if needed.
  3. Sauté vegetables: Add the diced green pepper and white onion to the skillet with the cooked beef. Sauté until the vegetables are softened, about 5-7 minutes.
  4. Add seasoning: Stir in 1 packet of taco seasoning along with ¼ cup water. Let the mixture simmer for 3-5 minutes until the sauce thickens and flavors meld together. Remove from heat.
  5. Assemble quesadillas: Place 3 tortillas on the prepared sheet pan. Evenly distribute half of the beef and vegetable mixture over each tortilla, then sprinkle a generous layer of Mexican blend shredded cheese on top. Place 3 more tortillas on top and add the remaining beef mixture and cheese. Finish by placing the last tortilla on top to create layered quesadillas.
  6. Bake: Bake in the preheated oven for 12-15 minutes or until the cheese is melted and bubbly and the tortillas are golden brown and crispy on the edges.
