Ingredients

Scale

Dinner Rolls:

  • 1 cup whole milk (240g), warm (around 110°F)
  • 3 teaspoons active dry yeast or instant yeast
  • ⅓ cup sugar (70g)
  • 3 ¾ cups all-purpose flour (490g)
  • 1 large egg
  • 1.5 teaspoons salt
  • 6 tablespoons unsalted butter, softened at room temperature (85g)
  • Egg wash: 1 egg yolk and 1 tablespoon milk

Garlic Butter:

  • ¼ cup salted butter (57g)
  • 23 garlic cloves, finely chopped
  • 12 tablespoons freshly chopped parsley

Instructions

  1. Activate the yeast: Warm the whole milk to about 110°F to create an ideal environment for the yeast. In a large mixing bowl, combine the warm milk with the active dry yeast and sugar. Let it sit for 5-10 minutes until it becomes frothy, indicating the yeast is active.
  2. Prepare the dough: To the yeast mixture, add the all-purpose flour, egg, salt, and softened unsalted butter. Mix these ingredients together until they form a cohesive dough.
  3. Knead the dough: Turn the dough onto a floured surface and knead it for about 8-10 minutes until it is smooth and elastic. Alternatively, use a stand mixer with a dough hook for 6-7 minutes.
  4. First rise: Place the kneaded dough into a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place until it doubles in size, approximately 1 to 1.5 hours.
  5. Shape the rolls: Punch down the risen dough to release air. Divide the dough into 12 equal pieces and shape each piece into a smooth ball. Arrange the dough balls evenly spaced in a greased 9×13 inch baking pan.
  6. Second rise: Cover the arranged dough balls again and let them rise for about 30-45 minutes until puffy.
  7. Apply egg wash: Preheat your oven to 375°F (190°C). Mix the egg yolk with 1 tablespoon of milk to make the egg wash. Brush the tops of the rolls gently with this egg wash to help them develop a golden crust.
  8. Bake the rolls: Bake the rolls in the preheated oven for 18-22 minutes or until golden brown and cooked through.
  9. Make garlic butter: While the rolls are baking, melt the salted butter in a small pan over low heat. Add finely chopped garlic and cook gently until fragrant but not browned. Remove from heat and stir in freshly chopped parsley.
  10. Glaze the rolls: Once the rolls come out of the oven, immediately brush the warm garlic butter generously over the tops of all the rolls for an added burst of flavor and moisture.
  11. Serve warm: Let the rolls cool slightly before serving. These dinner rolls are best enjoyed warm with extra butter or as a complement to your favorite main dishes.

Notes

  • Ensure the milk is not too hot when activating yeast, as temperatures above 120°F can kill the yeast.
  • You can substitute salted butter for unsalted in the dough if preferred, adjusting salt accordingly.
  • For a softer crust, cover the rolls with foil during the last 5 minutes of baking.
  • These rolls freeze well—cool completely, freeze in an airtight bag, and reheat in the oven before serving.
  • Garlic butter can be prepared ahead and stored in the refrigerator for up to 3 days.
