Ingredients

Scale

Liquids and Seasonings

  • 3 cups broth, chicken or vegetable
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Additional salt and pepper to taste

Main Ingredients

  • 2 cups broccoli florets, chopped pretty small
  • 1 cup white rice
  • 2 cups cheddar cheese, shredded
  • Splash of half and half, optional

Instructions

  1. Prepare the broth and seasonings: In a medium saucepan with a lid, bring the broth, olive oil, garlic powder, onion powder, and 1/4 teaspoon salt to a boil.
  2. Add rice and broccoli: Stir in the white rice and chopped broccoli, bring the mixture back to a boil, then cover with the lid and reduce the heat to low.
  3. Simmer: Let the mixture simmer gently for 20 minutes, or until the rice is fully cooked and the broccoli is tender. Some broth remaining is fine.
  4. Melt in cheese and cream: Stir in the shredded cheddar cheese until it melts completely. For a creamier texture, add a splash of half and half, if desired.
  5. Adjust seasoning: Taste the dish and add additional salt and pepper as needed before serving.

Notes

  • Be aware of the sodium content in your broth and cheese as it will affect the saltiness of the final dish; adjust seasoning accordingly at the end.
  • Brown rice cannot be substituted because it requires almost twice the cooking time and likely more liquid; this recipe is tested with white rice only.
