  • 8 cups Rice Chex cereal
  • 2 cups mini twist pretzels
  • 1/2 cup Easter M&Ms, divided
  • 1/2 cup jelly beans, divided

Chocolate Coating

  • 1 cup white chocolate chips
  • 1/2 cup peanut butter
  • 2 Tablespoons light olive oil

Instructions

  1. Combine dry ingredients: In a very large mixing bowl with a lid (20-30 cups/6-7 liter), pour the Rice Chex cereal, mini pretzels, and half of the candy (1/4 cup Easter M&Ms and 1/4 cup jelly beans). Set this aside.
  2. Melt chocolate mixture: In a medium-sized microwave-safe glass bowl, add the white chocolate chips, peanut butter, and light olive oil. Microwave for 1 minute, stirring every 30 seconds until the chocolate is completely melted and the mixture is smooth and combined.
  3. Coat the cereal mix: Pour the warm chocolate mixture over the cereal and pretzels. Gently stir to ensure all pieces are evenly coated with the chocolate-peanut butter mixture.
  4. Add powdered sugar coating: Pour the powdered sugar over the coated cereal mixture in the same large bowl, then seal the bowl with its lid. Shake vigorously for about 30 seconds or until every piece is well coated with powdered sugar.
  5. Mix in remaining candy and store: After the mixture has cooled, add the remaining 1/4 cup Easter M&Ms and 1/4 cup jelly beans, gently folding them in. Store the finished Easter Bunny Bait in an airtight container for up to two weeks.
