Instructions

  1. Boil the Eggs: Gently place your eggs into a large pot and fill with water until the water covers the eggs by about 2 inches. Bring the water to a rolling boil, then immediately turn off the heat, cover the pot, and let the eggs sit for 12 minutes.
  2. Cool and Peel Eggs: After 12 minutes, pour off the hot water and transfer the eggs to an ice bath to stop the cooking process. Once cooled, peel the eggs carefully.
  3. Combine Base Ingredients: Add the peeled hard-boiled eggs, softened cream cheese, and mayonnaise to the bowl of a food processor. Pulse until the mixture is smooth and creamy.
  4. Add Flavorings: Add in the yellow mustard, pickle juice, hot sauce, kosher salt, and black pepper. Pulse again until all ingredients are well combined and the dip has a uniform texture.
  5. Finish and Garnish: Transfer the dip to your serving bowl. Sprinkle the top with paprika and chopped fresh chives.
