Zucchini Mixture
- 2 lb zucchini (about 2 large or 5 medium), grated
- 1 1/2 tsp fine sea salt, divided
- 2 large eggs, lightly beaten
- 1/2 cup chopped green onions
Batter

- 1 tsp baking powder
- 1/2 tsp ground black pepper

- Drain the zucchini: After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible from the zucchini. This step is critical to ensure your fritters are crispy.
- Mix the batter: In a large bowl, combine the squeezed zucchini, eggs, chopped green onions, flour, baking powder, ground black pepper, and the remaining 1/2 tsp salt. Stir until well mixed into a thick batter.
- Heat the skillet: Heat a generous amount of olive oil in a large skillet over medium heat until shimmering but not smoking.
