  1. Prepare the zucchini: Grate the zucchini and place it in a colander. Sprinkle with 1 tsp of the sea salt and let it sit for 10 minutes to draw out the moisture.
  2. Drain the zucchini: After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible from the zucchini. This step is critical to ensure your fritters are crispy.
  3. Mix the batter: In a large bowl, combine the squeezed zucchini, eggs, chopped green onions, flour, baking powder, ground black pepper, and the remaining 1/2 tsp salt. Stir until well mixed into a thick batter.
  4. Heat the skillet: Heat a generous amount of olive oil in a large skillet over medium heat until shimmering but not smoking.
