Instructions

  1. Prepare the shrimp: Finely chop the peeled and deveined shrimp or pulse in a food processor until coarsely ground, ensuring a slightly chunky texture for the shrimp balls.
  2. Mix the ingredients: In a large mixing bowl, combine the ground shrimp, breadcrumbs, beaten egg, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, black pepper, chopped cilantro (if using), and cornstarch. Mix thoroughly until all ingredients are well incorporated and the mixture holds together when formed.
  3. Form the balls: Using your hands or a small scoop, shape the shrimp mixture into bite-sized balls, approximately 1 to 1.5 inches in diameter. Place them on a plate or tray lined with parchment paper.
  4. Heat the oil: In a deep frying pan or wok, pour enough vegetable oil to submerge the shrimp balls partially or fully (about 2 to 3 inches deep). Heat the oil over medium-high heat to 350°F (175°C). Use a thermometer for accuracy if available.
