  • 1 pint grape tomatoes, sliced in half
  • 1/2 cup heavy cream
  • 1/4 cup pesto

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry and season both sides evenly with salt and pepper to enhance flavor.
  2. Sear the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides and cooked through, about 5-7 minutes per side depending on thickness. Remove chicken from skillet and set aside.

  5. Combine Chicken and Sauce: Return the seared chicken breasts to the skillet, spooning some of the creamy pesto sauce over the top. Let the chicken simmer in the sauce for 2-3 minutes to meld flavors and heat through.
