  • 1/2 of an onion, diced
  • 1 large bell pepper, diced
  • 1 lb ground Italian sausage (chicken or pork)
  • 1 tbsp tomato paste
  • 1 tsp Italian seasoning
  • Pinch of red pepper flakes
  • 1/2 lb baby gold potatoes, quartered
  • Salt and pepper, to taste
  • 1 cup low sodium veggie or chicken broth
  • 1/2 cup heavy cream
  • 1 cup baby spinach
  • 1/4 cup parmesan, or more to taste

Instructions

  1. Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add diced onions and bell peppers, sautéing them for 4-5 minutes until softened and fragrant.
  2. Cook Sausage and Combine Ingredients: Add the ground Italian sausage to the skillet. Cook it while breaking it up with a spoon until it is no longer pink throughout. Next, stir in the quartered baby potatoes, tomato paste, Italian seasoning, red pepper flakes, salt, and pepper. Cook this mixture for about 1 minute to combine flavors.
  3. Simmer with Cream and Broth: Pour in the low sodium vegetable or chicken broth and heavy cream. Cover the skillet with a lid and reduce the heat to low. Let it simmer gently for 15-20 minutes, or until the potatoes become fork-tender and the sauce thickens slightly.
  4. Finish with Greens and Cheese: Turn off the heat. Stir in the baby spinach and grated parmesan cheese until the spinach wilts and the cheese melts into the creamy sauce. Adjust seasoning with salt and pepper if needed. Serve hot.
