Ingredients

Scale

Sausage

  • 13 oz. andouille sausage links (about 4 links), sliced into medallions

Vegetables

  • 6 oz. fresh baby bella mushrooms, cleaned and thinly sliced
  • ½ medium red bell pepper, stemmed, seeds removed, and thinly sliced
  • ½ medium yellow bell pepper, stemmed, seeds removed, and thinly sliced
  • 3 large garlic cloves, minced

Pasta & Sauce

  • 12 oz. gluten-free penne pasta
  • ½ cup (120 g) canned, diced fire-roasted tomatoes
  • 3 ½ cups (830 ml) chicken broth
  • 2 tablespoons no-salt or low-salt Cajun seasoning mix
  • 7 oz. cream cheese
  • Salt to taste

Garnish (Optional)

  • Fresh Italian parsley, finely chopped
  • Red pepper flakes

Instructions

  1. Prepare the Ingredients: Slice the andouille sausage into medallions, clean and thinly slice the baby bella mushrooms, and thinly slice the red and yellow bell peppers. Mince the garlic cloves carefully to release maximum flavor.
  2. Cook the Sausage and Vegetables: In a large skillet or pan over medium heat, cook the sliced sausage until browned. Add mushrooms, bell peppers, and garlic to the pan, sautéing until the vegetables are tender and fragrant.
  3. Add Seasoning and Tomatoes: Stir in the canned diced fire-roasted tomatoes and the Cajun seasoning mix. Cook together for a couple of minutes to blend the flavors well.
  4. Cook the Pasta: Add the gluten-free penne pasta to the skillet, then pour in the chicken broth. Bring the mixture to a boil, then reduce the heat and simmer until the pasta is tender and the liquid has reduced to create a sauce, approximately 12-15 minutes.
  5. Create the Creamy Sauce: Remove the skillet from heat and stir in the cream cheese slowly until melted and fully incorporated to make the sauce creamy and smooth. Adjust salt to taste.
  6. Serve: Garnish with freshly chopped Italian parsley and a sprinkle of red pepper flakes if desired. Serve hot for a deliciously creamy and spicy pasta dish.
