Ingredients

Scale

Meat & Protein

  • 1/2 lb. bacon
  • 1 lb. chicken breast

Dairy & Eggs

  • 1/2 cup freshly grated Parmesan cheese, plus more for sprinkling
  • 2 cups shredded mozzarella cheese, plus more for sprinkling
  • Egg wash (1 large egg beaten with 1 tbsp water or milk)

Other Ingredients

  • 2 Tbsp. extra-virgin olive oil, divided
  • 1 tsp. Italian seasoning, plus extra for sprinkling
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 lb. pizza dough
  • 1/4 cup Caesar dressing
  • 2 green onions, thinly sliced
  • 2 Tbsp. chopped parsley for garnish

Instructions

  1. Prepare the bacon and chicken: In a skillet over medium heat, cook the 1/2 lb. bacon until crispy. Remove and drain on paper towels, then chop into bite-sized pieces. In the same skillet, add 1 Tbsp. of olive oil and cook the chicken breasts seasoned with salt, pepper, and 1 tsp. Italian seasoning until cooked through, about 6-8 minutes per side. Once cooled, shred the chicken finely.
  2. Mix the filling: In a large bowl, combine the shredded chicken, chopped bacon, 1/2 cup Parmesan, 2 cups mozzarella, Caesar dressing, green onions, and the remaining 1 Tbsp. olive oil. Adjust seasoning with salt, pepper, and extra Italian seasoning if desired.
  3. Prepare the dough: Roll out the 1 lb. pizza dough on a lightly floured surface into a large rectangle roughly 12×16 inches. Spread the chicken and bacon mixture evenly over the dough, leaving a small border around the edges.
  4. Roll and seal: Starting from the long edge, carefully roll the dough into a tight log encasing the filling. Pinch the edges to seal completely and tuck the ends underneath to prevent filling leakage.
  5. Apply egg wash and sprinkle cheese: Place the rolled log seam-side down on a parchment-lined baking sheet. Brush the top all over with the prepared egg wash. Sprinkle additional mozzarella, Parmesan, and Italian seasoning on top for a golden, flavorful crust.
  6. Bake: Preheat the oven to 400°F (200°C). Bake the chicken bake for 25-30 minutes or until the crust is golden brown and cooked through. Let it rest for a few minutes before slicing.
  7. Garnish and serve: Slice the bake into individual portions and garnish with freshly chopped parsley. Serve warm and enjoy.

Notes

  • Use day-old pizza dough for better handling and flaky crust.
  • You can substitute Caesar dressing with ranch or your favorite creamy dressing.
  • Ensure the chicken is finely shredded to help the filling hold together.
  • Leftover chicken bake can be refrigerated and reheated in the oven to preserve crispiness.
  • Optional: add chopped jalapeños or red pepper flakes for a spicy kick.
