Instructions

  1. Prepare the First Layer: Dissolve the lime Jell-O package in 2¼ cups of hot water (not boiling), stirring until completely dissolved. Pour the mixture into a 9×13-inch dish and chill in the refrigerator until set, about 1-2 hours.
  2. Prepare the Second Layer: Beat the cream cheese until smooth in a mixing bowl. Add mini marshmallows and pineapple juice, mixing gently. Dissolve the lemon Jell-O package in 1½ cups of hot water (not boiling); allow it to cool slightly before folding it into the cream cheese mixture. Once the first layer is firm, spread this mixture evenly over it. Return to the refrigerator to chill until firm, approximately 2-3 hours.
  3. Prepare the Third Layer: Dissolve the cherry Jell-O package in 2 cups of hot water (not boiling), stirring well. Let the mixture cool to room temperature, then pour gently over the second layer. Refrigerate until the entire dessert is fully set, at least 4 hours or overnight.
  4. Serve: Cut into squares and serve chilled. This salad is best enjoyed cold and can be stored in the refrigerator for up to 3 days.
