  • 200 ml milk
  • 15 g honey
  • 9 g instant yeast
  • 1 egg
  • 30 ml sunflower oil
  • 600 g flour
  • 8 g salt
  • 25 g butter

Topping

  • 40 g Parmesan cheese
  • 2 g cayenne powder
  • 1.5 g onion powder
  • 1 g black pepper powder

Chicken Mixture

  • 700 g chicken filet
  • 5 g salt
  • 3 g onion powder
  • 3 g garlic powder
  • 4 g cayenne powder
  • 1.5 g black pepper powder
  • 15 g sambal oelek
  • 10 ml soy sauce
  • 1 egg

Extra

  • Milk (for brushing)

Cornstarch Mixture

  • 150 g cornstarch
  • 2 g salt
  • 1.5 g black pepper powder
  • 3 g onion powder

Sauce

  • 120 g mayonnaise
  • 75 g chili sauce
  • 20 g sambal oelek

Instructions

  1. Prepare the Dough: In a mixing bowl, combine water, milk, honey, and instant yeast, allowing it to activate for a few minutes. Add the egg, sunflower oil, flour, salt, and softened butter. Knead the mixture thoroughly until a soft and elastic dough forms. Cover and let it rise for about 1 to 1.5 hours until doubled in size.
  2. Prepare the Chicken Filling: Cut chicken filet into small pieces. Season the chicken with salt, onion powder, garlic powder, cayenne powder, black pepper, sambal oelek, soy sauce, and egg. Mix well and marinate briefly. Then, coat the seasoned chicken pieces evenly with the cornstarch mixture to give them a light crust.
  3. Cook the Chicken: Fry or pan cook the coated chicken pieces on medium heat until fully cooked and crispy on the outside, about 8-10 minutes. Remove from heat and let cool slightly.
  4. Make the Sauce: In a small bowl, combine mayonnaise, chili sauce, and sambal oelek. Mix well to create a creamy, spicy sauce to complement the chicken filling.
  5. Assemble the Buns: Once the dough has risen, divide it into equal portions. Flatten each portion and place a generous amount of cooked chicken and sauce in the center. Fold and seal the dough around the filling to form a bun shape.
  6. Add Topping: Mix Parmesan cheese, cayenne powder, onion powder, and black pepper powder. Brush each bun lightly with milk, and sprinkle the topping mixture evenly over the buns.
  7. Proof the Buns: Place the assembled buns on a baking tray lined with parchment paper. Cover and let them rise for another 30 minutes to develop fluffiness.
  8. Bake: Preheat the oven to 180°C (350°F). Bake the buns for 15-20 minutes or until golden brown and cooked through. Remove from the oven and cool slightly before serving.

Notes

  • Ensure the dough is well kneaded to develop good gluten structure for soft buns.
  • Marinating the chicken with the spices and sambal oelek enhances the flavor significantly.
  • Coating the chicken with cornstarch provides a crispy texture during cooking.
  • Adjust the amount of cayenne powder and sambal oelek to control spice level.
  • Use fresh Parmesan cheese for the best topping flavor.
  • Brush the buns with milk before baking to achieve a nice golden crust.
