Ingredients

Scale

Protein & Vegetables

  • 1 lb Ground chicken
  • 1 Small onion, finely chopped
  • 1 Bell pepper, chopped
  • 2 Cloves garlic, minced

Liquids & Seasonings

  • 1 tbsp Olive oil
  • 1/2 tsp Cajun seasoning
  • 1/2 cup Chicken broth
  • 1/4 cup Heavy cream
  • Salt and pepper, to taste

Cheese & Bread

  • 1 cup Shredded cheddar cheese
  • 4 Brioche or hamburger buns

Instructions

  1. Prepare the vegetables: Finely chop the onion, chop the bell pepper, and mince the garlic cloves to have all your ingredients ready for cooking.
  2. Sauté aromatics and vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and minced garlic. Cook for about 4–5 minutes until the vegetables are softened and fragrant.
  3. Cook the ground chicken: Add the ground chicken to the skillet with the sautéed vegetables. Break up the meat with a spatula and cook until it is no longer pink, about 6–8 minutes. Season with salt, pepper, and Cajun seasoning, stirring to evenly coat the chicken.
  4. Add liquids and simmer: Pour in the chicken broth and stir to combine. Allow the mixture to simmer for 5 minutes so the flavors meld and the liquid slightly reduces.
  5. Incorporate cream and cheese: Lower the heat and add the heavy cream and shredded cheddar cheese. Stir continuously until the cheese is melted and the sauce becomes creamy and well combined with the chicken mixture. Adjust seasoning as needed.
  6. Assemble and serve: Toast the brioche or hamburger buns if desired. Spoon the Cajun chicken mixture generously onto the buns and serve immediately while hot.

Notes

  • You can adjust the level of Cajun seasoning to make it more or less spicy according to your taste preferences.
  • For a lighter version, substitute heavy cream with half-and-half or a lower fat milk option, though the creamy texture might be slightly less rich.
  • Adding a pinch of smoked paprika or cayenne pepper can enhance the smoky and spicy notes of the dish.
  • Serve with a side of coleslaw or a green salad to balance the richness of the sloppy joes.
  • Leftovers can be refrigerated for up to 3 days and reheated on the stovetop or microwave.
