Instructions

  1. Prepare the Garlic Butter: In a small saucepan, combine minced garlic, olive oil, butter, a pinch of salt, and fresh parsley. Warm gently over low heat until the butter melts and the garlic softens, releasing its aroma. Set aside to cool.
  2. Activate the Yeast: In a bowl, mix warm milk with active dry yeast and honey. Let it sit for 5 to 10 minutes until it becomes frothy, indicating the yeast is active.
  3. Make the Dough: In a large mixing bowl, combine all-purpose flour, bread flour, milk powder, sugar, and salt. Add in the butter, egg yolks, and the yeast mixture. Knead the ingredients either by hand or using a stand mixer with a dough hook until a smooth, elastic dough forms. This should take about 8 to 10 minutes. Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour or until it doubles in size.
  4. Shape the Rolls: Once the dough has risen, punch it down gently to release air. Roll the dough on a floured surface into a rectangle. Brush a generous layer of the prepared garlic butter over the dough, then scatter the shredded mozzarella cheese evenly. Roll the dough tightly from one end to the other to form a log. Cut the log into evenly sized rolls.
  5. Second Proof: Place the rolls on a baking tray lined with parchment paper or a greased pan. Cover and let them rise again for 30 to 40 minutes, allowing them to puff up.
