4.5 from 85 reviews

Butter Toffee Pretzels are a delightful sweet and salty treat made by coating mini pretzel twists in a rich buttery toffee sauce infused with brown sugar, corn syrup, and vanilla, then topped with crunchy Heath English toffee bits. Perfect for snacking or gifting, these indulgent bites combine the crunch of pretzels with the smooth, caramel-like flavor of homemade toffee.

Ingredients

Scale

Pretzels

  • 16 ounce mini pretzel twists

Toffee Sauce

  • 1 cup light brown sugar, packed
  • ½ cup (1 stick) salted butter, sliced into pats
  • 5 tablespoons light corn syrup
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon baking soda

Toppings

  • 8 ounce package Heath English toffee bits, divided

Instructions

  1. Prepare the Toffee Mixture: In a medium saucepan over medium heat, combine the light brown sugar, salted butter, and light corn syrup. Stir the mixture gently to help dissolve the sugar and melt the butter completely.
  2. Bring to a Boil and Simmer: Allow the mixture to come to a gentle boil, stirring occasionally. Continue boiling for about 3-5 minutes or until the mixture thickens slightly and reaches the soft-ball stage when tested in cold water (235°F to 240°F).
  3. Add Vanilla and Baking Soda: Remove the saucepan from heat. Stir in the pure vanilla extract followed immediately by the baking soda. The mixture will foam and lighten in color, which is normal and creates a lighter toffee texture.
  4. Combine Pretzels and Toffee: Quickly pour the hot toffee mixture over the mini pretzel twists in a large bowl. Stir promptly and thoroughly to evenly coat all the pretzels before the toffee hardens.
  5. Add Toffee Bits and Cool: Stir in half of the Heath English toffee bits to the coated pretzels. Spread the mixture onto a parchment-lined baking sheet to cool and harden at room temperature.
  6. Finish with Toppings: Once the pretzels have set but are still slightly tacky, sprinkle the remaining Heath English toffee bits over the top, pressing gently if needed to adhere.
  7. Serve or Store: Allow the toffee pretzels to fully cool and harden. Break into clusters if needed and serve. Store in an airtight container at room temperature for up to one week for optimal freshness.

Notes

  • Light corn syrup is important for texture; avoid substituting with dark corn syrup or honey.
  • Use a candy thermometer to ensure the toffee reaches the correct temperature for best results.
  • Work quickly when coating the pretzels, as the toffee mixture hardens fast once removed from heat.
  • Store in a cool, dry place to prevent the toffee from becoming sticky.
  • For a nuttier flavor, consider adding chopped nuts with the toffee bits.
