Instructions

  1. Crush Cookies: Blend Biscoff cookies in a food processor until they form fine crumbs, pulsing as needed to break up large chunks.
  2. Prepare Mixture: Transfer crumbs to a large bowl, setting aside a couple of tablespoons for decoration. Stir in cream cheese and vanilla extract until fully combined into a smooth dough.
  3. Form Balls: Scoop the mixture into 1.5-inch balls using a spoon or scoop, placing them on a wax paper-lined plate for easy handling.
  4. Chill: Refrigerate the formed balls for 1 hour to firm up the truffles.
  5. Melt Chocolate: Melt white chocolate using a candy melter set to “warm” or alternatively a microwave or double boiler, stirring frequently to prevent burning.
  6. Dip Truffles: One at a time, dip the chilled truffles into the melted white chocolate using a dipping fork, ensuring complete coating. Place them back onto wax paper.
  7. Decorate: Immediately sprinkle the reserved cookie crumbs or holiday sprinkles onto each coated truffle before the chocolate hardens.
