Instructions

  1. Prepare the Chocolate Mixture: In a large glass bowl, combine the butterscotch and semi-sweet chocolate chips. Melt the mixture either in the microwave by heating on high for 30 seconds, stirring, then continuing in 15-to-30 second intervals until smooth, or by using the Instant Pot method where the bowl rests on a steaming Instant Pot liner receiving indirect heat like a double boiler. Stir continuously until the chocolate is completely melted and combined.
  2. Coat the Chow Mein Noodles: Add the chow mein noodles to the melted chocolate mixture. Gently fold and stir to ensure all the noodles are fully coated, making sure to lift chocolate from the bottom of the bowl to achieve an even coating.
  3. Form the Nests: Using large spoons, drop spoonfuls of the coated noodle mixture onto a parchment-lined baking sheet or a silicone baking mat. Shape each spoonful into a nest by forming an indentation in the center to cradle the candy eggs.
  4. Add the Candy Eggs: Place 3 candy eggs gently into the indentation of each nest-shaped cookie to resemble bird nests with eggs inside.
  5. Cool the Cookies: Allow the nests to cool and set at room temperature until firm. This typically takes about 20-30 minutes.
  6. Store Properly: Once cooled, store the birds nest cookies in a sealed container. They keep well for up to one week but are best enjoyed within 2 to 4 days to maintain freshness and crunch.
