Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the bundles.
  2. Prepare Green Beans: Wash and trim the ends of the French green beans. Blanch them in boiling water for 2-3 minutes until just tender but still crisp. Immediately transfer to an ice bath to stop cooking and retain their bright green color. Drain and pat dry.
  3. Form Bundles: Divide the green beans into 12 even bundles. Wrap each bundle tightly with one slice of smoky bacon ensuring the ends are secured underneath or with a toothpick if needed.
  4. Prepare Glaze and Season: In a small bowl, mix the extra virgin olive oil, garlic salt, light brown sugar, and finely minced fresh rosemary to create a flavorful glaze.
  5. Coat Bundles: Place the bacon-wrapped bundles on a baking sheet lined with parchment paper or a wire rack. Brush or drizzle the glaze mixture evenly over each bundle to coat thoroughly.
