Instructions

  1. Thaw Puff Pastry: Fully thaw the puff pastry in the refrigerator before you start to ensure it is pliable and easy to work with.
  2. Prepare Ingredients: In a medium bowl, mix lemon juice with a cup of cold water. Combine brown sugar and ground cinnamon in a separate small bowl. Spray a muffin pan with non-stick spray to prepare for baking.
  3. Slice Apples: Core the apples and cut them in half lengthwise. Place flat side down and slice very thinly from bottom to top, as thin as possible; a mandolin slicer can help for consistency.
  4. Soak Apple Slices: Immediately place the apple slices in the lemon water to prevent browning. Coat well and set aside.
  5. Roll Out Puff Pastry: On a lightly floured surface, roll out the pastry slightly to increase its size by about one inch in all directions.
  6. Cut Pastry Strips: Slice the pastry into 6 even strips and arrange them spaced apart on the work surface.
  7. Prepare Jam Glaze: Loosen the jam by mixing it with a splash of hot water, then brush a thin layer over each pastry strip using a pastry brush.
  8. Add Cinnamon Sugar: Sprinkle each strip generously with the cinnamon and brown sugar mixture for sweet spice flavor.
  9. Soften Apples: Microwave the bowl of apple slices for 2 minutes to soften. Drain excess water and allow them to cool slightly but not completely.
  10. Arrange Apple Slices: Place apple slices along the top edge of one strip, allowing them to slightly overlap and extend beyond the edge, forming the rose petals. Work on one strip at a time.
  11. Fold Pastry: Fold the bottom edge of the pastry strip up to cover the bottom part of the apple slices to secure them.
  12. Roll Roses: Brush the top edge with jam for adhesion, then carefully roll the pastry strip from one end to the other creating a rose shape.
  13. Place in Muffin Pan: Place each rolled apple rose into a greased muffin pan cavity. Repeat with all strips.
  14. Chill Roses: Refrigerate the formed apple roses to firm up while you preheat the oven to 400°F (200°C, 180°C fan-assisted).
  15. Bake: Bake the roses on the middle oven rack for 40-45 minutes until the pastry is golden brown. Tent with foil if apples start to over-brown.
  16. Cool and Remove: Once baked, loosen the edges with a sharp knife and transfer the apple roses to a cooling rack immediately to prevent sogginess.
  17. Optional Glaze: For a shiny finish, warm additional jam and brush it lightly on the apple petals just before serving.
