4.9 from 73 reviews

This Apple and Brie Stuffed Chicken Breast recipe combines tender chicken breasts stuffed with sweet honeycrisp apple slices and creamy brie cheese, all glazed with a flavorful maple, dijon, and thyme sauce. The result is a perfect balance of savory and sweet, ideal for an elegant yet simple weeknight dinner.

Ingredients

Scale

Stuffed Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 honeycrisp apple, cored and sliced thin
  • 1 wedge of brie cheese, sliced
  • Salt and pepper, to taste

Maple Glaze:

  • 2 tablespoons maple syrup
  • 1 teaspoon dijon mustard
  • ¼ teaspoon dried thyme
  • 1 garlic clove, minced

Instructions

  1. Preheat and Prepare Chicken: Preheat your oven to 375°F (190°C). Using a sharp knife, carefully cut a pocket into the side of each chicken breast, creating space for the stuffing without cutting all the way through.
  2. Stuff the Chicken: Season the chicken breasts inside and out with salt and pepper. Stuff each pocket with thin slices of honeycrisp apple and brie cheese, packing them generously but carefully to avoid tearing the chicken.
  3. Make the Maple Glaze: In a small bowl, whisk together the maple syrup, dijon mustard, dried thyme, and minced garlic until well combined. This glaze will add a sweet and savory note to the dish.
  4. Cook the Chicken: Place the stuffed chicken breasts in a lightly greased baking dish. Brush the maple glaze evenly over the tops of the chicken breasts to coat. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  5. Rest and Serve: Remove the chicken from the oven and let it rest for 5 minutes to allow the juices to redistribute. Serve warm, spooning any extra glaze from the baking dish over the chicken for added flavor.

Notes

  • Make sure to slice the apples thinly to ensure they cook properly inside the chicken.
  • If brie rind is unpleasant to you, feel free to remove the rind before stuffing.
  • You can use other sweet apples if honeycrisp is not available, such as Fuji or Gala.
  • Check the internal temperature with a meat thermometer to avoid undercooking or overcooking.
  • This recipe pairs well with roasted vegetables or a simple green salad.
