Ingredients

Scale

Base and Topping

  • one 13.29oz package Oreos (divided)
  • 1 1/2 cups shredded coconut
  • 23 drops green food coloring
  • 810 Peeps bunnies
  • 2026 Cadbury mini eggs

Filling

  • one 8-ounce package cream cheese, softened
  • 1/2 stick unsalted butter, softened (4 tablespoons)
  • 1 cup powdered sugar
  • one 16oz container Cool Whip (whipped topping)
  • two 3.9oz boxes instant chocolate pudding mix
  • 3 cups cold milk

Instructions

  1. Crush Oreos: Place Oreos in a large Ziploc bag and crush them into fine crumbs using a rolling pin or mallet. Reserve 1 1/2 cups of the crushed Oreos for the topping.
  2. Prepare Oreo Base: Spread the remaining crushed Oreos evenly across the bottom of a 9×13 inch baking dish to form the base layer.
  3. Make Cream Cheese Mixture: In a large bowl, beat together the softened cream cheese and butter until smooth and creamy. Add powdered sugar and mix until well combined. Gently fold in the Cool Whip until fully incorporated and fluffy.
  4. Prepare Pudding: In a separate large bowl, whisk together both boxes of instant chocolate pudding mix with 3 cups of cold milk until smooth and thickened.
  5. Combine Mixtures: Pour the pudding mixture into the cream cheese mixture and stir until the filling is smooth and homogeneous.
  6. Assemble Cake: Spread the combined filling evenly over the Oreo base in the baking dish. Sprinkle the reserved crushed Oreos evenly on top. Cover and refrigerate for a few hours or overnight to allow it to set properly.
  7. Color Coconut ‘Grass’: Place the shredded coconut and green food coloring drops into a large Ziploc bag. Seal and shake vigorously to evenly color the coconut bright green, creating the effect of grass.
  8. Decorate and Serve: Just before serving, top the set cake with the green coconut, arrange the Peeps bunnies across the surface, and scatter Cadbury mini eggs to complete the festive Easter look.

Notes

  • Leave air in the bag when coloring the coconut so it shakes freely and colors evenly.
  • Use INSTANT pudding mix; this recipe does not require cooking pudding, keeping it quick and easy.
  • For best results, chill overnight to allow flavors to meld and dessert to firm up.
